Pretty Food: BLT Salad

Hello, and happy Monday!

Hope you enjoyed a fabulous weekend filled with family and fun. Is that even still allowed? Haha!

One thing that is still allowed (as far as I know) is beautiful and delicious food. We’ve gotta try to keep ourselves looking and feeling great so that when we can go out and do more, we’ll be ready, and rarin’ to go.

I have a fun dinner salad idea to share with you that fits the bill for my “Pretty Food” Category. I call it my BLT Salad. It’s very easy to make, which is always a bonus. It’s pretty to look at, pretty to eat, and helps us stay pretty. Yay!

For this salad I like to use Romaine Lettuce, or even a combo Romaine/Iceburg. For the salad dressing, my husband mixed up some Ranch Dressing using both sour cream and plain yogurt. We like to make our Ranch Dressing homemade so that we can control the salt content + adding yogurt is an extra healthy boost.

For the toppings I used chopped tomatoes, sliced avocados, and crispy bacon. Cook your bacon your favorite way. I like to put mine in the oven. It’s something new I’ve been doing and the bacon comes out really pretty and crispy.

For the top toppings I used some crumbled blue cheese and some crispy fried onions from a can. I know… but hey, just a few for flavor.

I served our salads with a boiled egg on the side and some whole wheat toast.

So simple, so easy to do, and so delicious.
